Boil water and let it cool to 93°C (use thermometer or wait 30 seconds after boiling)

Set up Aeropress in INVERTED position: put plunger in chamber, push to #4 mark, flip upside down

Place Aeropress on scale and zero it

Add 18g of ground coffee (fine-medium grind) to the chamber

Start timer immediately, pour all 200g water quickly in circular motion to wet all grounds

At 10 seconds: Stir vigorously for 10 seconds with paddle or spoon

Put wet paper filter in cap and screw cap on tight

At 2:00 minutes: Place cup on top, flip carefully so cup is on bottom

Press steadily for 30 seconds using body weight until you hear hissing sound

- •If too strong, reduce coffee to 16g
- •If too weak, increase coffee to 20g
- •For brighter taste, try 94°C
- •Make sure grind is fine-medium, not regular medium
