- •Light roasts (city/cinnamon): Use hotter water (95-98°C), finer grind, longer steep
- •Medium roasts (full city): Most forgiving - start here as beginner. Use 92-94°C.
- •Dark roasts (french/italian): Use cooler water (88-92°C), coarser grind, shorter steep
- •Bean color: Light = tan/brown, Medium = chocolate brown, Dark = almost black with oil
- •Lighter roasts have more caffeine (less is burned off) despite tasting less "strong"
- •Freshness matters more for light roasts - they stale faster than dark
⚠️ Common Mistakes
- ✗Brewing all roasts the same way - light roasts need completely different approach than dark
- ✗Thinking darker = stronger = better. Dark roasts actually have less complexity.
- ✗Using boiling water on dark roasts - creates harsh bitterness
- ✗Using low temp (88°C) on light roasts - sour, underdeveloped, grassy
- ✗Buying ultra-dark "Italian" roast thinking it's premium - it often hides bad beans
